In between classes, I stumbled across this interesting article by Jason Seib - Sugar, Insulin Resistance, and Fat Loss . I think it's a pretty informative article and Jason does a great job of breaking down the biochemistry of the body's processes into simplified/understandable terms.
I find it ironic that processed carbs (i.e. grains) have been directly linked to hyperinsulinemia through sound medical research...yet our food pyramid proudly depicts grains at its base. Oh well...maybe one day we will get it right.
Though I don't eat grains myself, true whole grains are low glycemic and don't have the same effects on your insulin. So they wouldn't be bad if not for the fact that they have antinutrients such as gluten and insoluble fibers that cut up your colon. When I did a myplate nutrition analysis for my human nutrition class, I was sufficient or well over the daily value in all of my nutrients WITHOUT grains. Just more proof that you don't need grains and even the "good" grains have a negative effect on you, so why bother?
